But the Scarlets were reduced to 13 men late on as Rob Evans and Mike Poole were sin-binned and Munster took advantage to stay at the summit of the RaboDirect PRO12.
Ronan O'Mahony touched down with the final play of the game to break Scarlets hearts, and leave Easterby feeling another sense of déjà vu.
"We probably, to about 75 minutes, were the better team," Easterby told Wales Online.
"But we've been in games in the last couple of weeks against Clermont for large periods and a little bit of accuracy and bit of a meltdown at times means that sometimes we don't get the reward we deserve.
"But you have got to win the game after 80 minutes, not after 75 or 79 or whatever was."
