Fly-half Jackson, 25, made his debut for the Warriors in 2008 while flanker Eddie, 28, joined the RaboDirect PRO12 club in 2005 and made his first appearance the following year.
The pair join a select list of 14 other Glasgow players to have reached the milestone, including Scotland stars John Barclay, Dan Parks, Al Kellock and Johnnie Beattie.
"It will be a fantastic occasion welcoming the Heineken Cup champions to Glasgow on Saturday and it will be a special day for both Ruaridh Jackson and James Eddie," said Townsend.
"They continue to be great servants for the club and thoroughly deserve to join our elite group of centurions."
And after beating Exeter Chiefs in their last European Cup outing, Townsend is keen for Glasgow to put on another good show at Scotstoun.
"This is a very exciting game for our players and supporters," he added. "We saw first-hand how good a side Toulon are when we played them in October and they pose a dangerous attacking threat all over the pitch, as well as being very strong defensively.
"We still have a chance of qualifying for the Amlin Challenge Cup and that is a big motivation for us."
