It was their largest-ever league victory while two tries for Simon Zebo means he is now the province's all-time top try scorer with 43 tries in 97 appearances - two more than Anthony Horgan's 41.
The result also lifted them above Ulster and into the GUINNESS PRO12 play-off places with just four games remaining in what is gearing up to be a dramatic end to the season.
Playing into a strong wind during the first half at Thomond Park on Friday, Munster only led 14-0 at the break - an early penalty try and Ronan O'Mahony's score doing the damage.
But it was a different story after the interval as the hosts stormed clear thanks to Zebo's double, a second penalty try and scores from returning Ireland internationals CJ Stander and Conor Murray.
And despite their relatively narrow advantage at half-time, Foley is adamant their efforts in the first period set them up perfectly for a comfortable triumph.
"I thought we played good rugby against the wind in the first half and took advantage of that in the second", said Foley.
"Our target is to get into the top four in the GUINNESS PRO12 and make the European Cup next season and this will help.
"Now it's on to Leinster. It helped that we had six guys back tonight but of course they are in much the same situation."
