Moffat's side ran out 17-16 winners at the Parc y Scarlets as they bounced back from a disappointing home defeat to the Dragons on November 1.
Having set the early pace in the Magners League season, three defeats in four games had seen Edinburgh enter the enforced autumn break three points adrift of league leaders Leinster.
But Friday night's victory means last year's runners up are now joint top of the table, level on points with fellow Scots Glasgow.
"I suppose the Scarlets will claim that, on chances created, they deserved to win. Having said that, I felt we stuck in there and took our opportunities well when they came our way," said Moffat after Edinburgh overturned an 8-3 half-time deficit to end the Scarlets' three match unbeaten home run.
"I am delighted to go home from Wales with a valuable win under our belts. We were disappointed after the Dragons defeat, but this is the perfect way to strike back.
"It was never going to be a high-scoring game but we are not too worried about that. It was tough in the end and they came at us quite strong.
"However, we, too, had our chances and I was delighted with the manner in which we took them."
Moffat was also quick to praise outside-half David Blair after he produced a man-of-the-match display despite having seen little game time so far this season.
The form of Scotland regular Phil Godman has limited Blair's opportunities this season but the 24-year-old showed his worth with an impressive second-half performance in which his stunning break to set up Craig Hamilton's try proved the game's stand-out moment.
"He would be the first to admit that he did not have a great first half but he showed terrific quality in the second half," explained Moffat.
"Unfortunately, we don't live in a perfect world and I have to admit that I have not managed him well. Phil Godman has played constantly at outside-half, so to come in for a game of this nature is not easy.
"All credit must go to him for the way he did. I am delighted for him and once again, it gives me another selection headache."
